Description

A fresh and hearty tortellini pasta salad packed with veggies, cheese, and flavor – perfect for picnics or a quick lunch.


Ingredients

  • 1 package (about 500g) cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves
  • 1/4 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to the package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the tortellini, cherry tomatoes, cucumber, red onion, olives, and mozzarella balls.
  3. Add the fresh basil leaves.
  4. Drizzle with Italian dressing and toss to coat everything evenly.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving for best flavor.

Notes
