Ingredients

- 1 package (about 500g) cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls (bocconcini), halved
- 1/4 cup fresh basil leaves
- 1/4 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the tortellini according to the package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the tortellini, cherry tomatoes, cucumber, red onion, olives, and mozzarella balls.
- Add the fresh basil leaves.
- Drizzle with Italian dressing and toss to coat everything evenly.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving for best flavor.
Notes
This salad is best served chilled and can be made a few hours ahead. Customize with your favorite vegetables or protein for a heartier meal.
