  • 1 pound beef (chuck shoulder or stew meat), cut into 1‑inch chunks, seasoned with salt and pepper
  • 2 tablespoons avocado oil
  • 1 large white or yellow onion, cut into large chunks
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all‑purpose flour
  • 3 cups low‑sodium beef broth
  • A few sprigs of fresh thyme (or ½ teaspoon dried thyme)
  • 16 ounces mushrooms, washed and quartered
  • 4 stalks celery, cut into large chunks
  • 5 carrots, peeled and cut into large chunks
  • 10 red potatoes (about 2 pounds), cut into big chunks
  • ½ teaspoon kosher salt
  • Black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the beef with salt and pepper, then toss with flour to coat.
  2. Heat avocado oil in a large pot over medium‑high heat and brown the beef on all sides; remove and set aside.
  3. Reduce heat to medium, add butter, and sauté onion and garlic until softened.
  4. Stir in thyme and mushrooms, cooking until mushrooms begin to brown.
  5. Return the beef to the pot, pour in beef broth, and bring to a simmer.
  6. Add carrots, celery, and potatoes; season with kosher salt and additional black pepper.
  7. Cover and simmer gently for 1½–2 hours, or until the meat is tender and vegetables are cooked through.
  8. Adjust seasoning, garnish with fresh parsley, and serve hot.

Notes

For a lighter version, substitute lamb for beef or use a combination of both. If you prefer a thicker broth, increase the flour to ¼ cup. Leftovers taste even better the next day and reheat well. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
