Description

Savory and juicy turkey meatloaf muffins wrapped in crispy bacon — the perfect protein-packed individual portions for a family dinner or meal prep!


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup ketchup (plus extra for topping)
  • 12 slices of bacon
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, paprika, and ketchup. Mix until just combined.
  3. Spray a muffin tin with cooking spray or lightly grease with oil.
  4. Line each muffin cup with a slice of bacon, pressing it around the sides.
  5. Spoon the meat mixture into each bacon-lined cup, pressing down slightly.
  6. Top each with a small dollop of ketchup.
  7. Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the bacon is crisp.
  8. Let rest for 5 minutes before removing from the tin.
  9. Garnish with chopped parsley if desired and serve warm.

Notes

You can prepare these in advance and freeze them for a quick weeknight meal. Feel free to add shredded cheese or chopped veggies for added flavor and texture.
