- 12 oz pasta (penne or rotini)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup frozen peas
- 2 cups cooked turkey, shredded
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup milk or half-and-half
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Cook the pasta according to package instructions and drain.
- In a large skillet, melt the butter with olive oil over medium heat.
- Add onion and carrots and sauté until softened.
- Stir in garlic and cook for 30 seconds.
- Sprinkle flour over the vegetables and stir to coat.
- Gradually whisk in chicken broth until smooth.
- Add milk, thyme, rosemary, salt, and pepper.
- Simmer until the sauce thickens.
- Stir in turkey and peas.
- Add cooked pasta and toss to combine.
- Finish with Parmesan cheese and serve warm.

Leftover turkey works perfectly in this recipe and makes it extra convenient after the holidays.
