Description

Ingredients

  • 12 oz pasta (penne or rotini)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 2 cups cooked turkey, shredded
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or half-and-half
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions and drain.
  2. In a large skillet, melt the butter with olive oil over medium heat.
  3. Add onion and carrots and sauté until softened.
  4. Stir in garlic and cook for 30 seconds.
  5. Sprinkle flour over the vegetables and stir to coat.
  6. Gradually whisk in chicken broth until smooth.
  7. Add milk, thyme, rosemary, salt, and pepper.
  8. Simmer until the sauce thickens.
  9. Stir in turkey and peas.
  10. Add cooked pasta and toss to combine.
  11. Finish with Parmesan cheese and serve warm.
