Description

A vibrant and comforting plant-based dish made with roasted cauliflower and chickpeas, warmly spiced with turmeric and simple pantry seasonings.


Ingredients

  • 1 large cauliflower, cut into florets
  • 2 cups cooked chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 3 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Place cauliflower florets and chickpeas on a large baking sheet.
  3. Add olive oil, turmeric, cumin, paprika, garlic, salt, and black pepper.
  4. Toss well until everything is evenly coated.
  5. Spread into an even layer.
  6. Roast for 30–35 minutes, stirring halfway through.
  7. Remove from the oven when golden and tender.
  8. Garnish with fresh parsley or cilantro before serving.

Notes

Serve as a main vegetarian dish or as a flavorful side. Can be paired with rice, quinoa, or flatbread.
