Ingredients

- 1 large cauliflower, cut into florets
- 2 cups cooked chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 3 cloves garlic, minced
- Salt to taste
- Black pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Place cauliflower florets and chickpeas on a large baking sheet.
- Add olive oil, turmeric, cumin, paprika, garlic, salt, and black pepper.
- Toss well until everything is evenly coated.
- Spread into an even layer.
- Roast for 30–35 minutes, stirring halfway through.
- Remove from the oven when golden and tender.
- Garnish with fresh parsley or cilantro before serving.
Notes
Serve as a main vegetarian dish or as a flavorful side. Can be paired with rice, quinoa, or flatbread.
