- 2 tbsp olive oil
- 1 onion, finely chopped
- 6 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp chili flakes (optional)
- 2 cups chopped kale or spinach
- Salt and black pepper, to taste
- Juice of 1/2 lemon
- Grated Parmesan, for serving (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté for 5–7 minutes until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Add broth, beans, thyme, rosemary, and chili flakes if using. Bring to a simmer.
- Simmer for 15–20 minutes, allowing flavors to blend.
- Lightly mash some beans in the pot to thicken the soup.
- Stir in kale or spinach and cook until wilted, about 3 minutes.
- Season with salt, pepper, and lemon juice.
- Serve hot, topped with Parmesan and a drizzle of olive oil if desired.
Notes
For extra richness, add a splash of cream before serving. Serve with crusty bread for a complete Tuscan-style meal.
