Description

Ingredients

  • 2 whole heads garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 4 cups chicken or vegetable broth
  • 1 large potato, peeled and diced
  • 1 cup heavy cream
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.
  3. In a large pot, melt butter over medium heat. Add onion and sauté until translucent.
  4. Add diced potato, broth, and turmeric. Simmer until potato is tender, about 15 minutes.
  5. Squeeze roasted garlic cloves into the pot and stir.
  6. Blend soup with an immersion blender until smooth and creamy.
  7. Stir in heavy cream, then season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.

Notes

For a vegan version, replace butter with olive oil and cream with coconut cream for a rich, dairy-free twist.
