Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg + 1 yolk
  • 1 tsp almond extract
  • 1/2 cup seedless raspberry jam
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Beat butter and sugar until light and fluffy. Add egg, yolk, and almond extract.
  2. Gradually mix in flour until dough forms. Divide into 2 discs, wrap in plastic, and chill 1 hour.
  3. Preheat oven to 350°F. Roll dough to 1/4″ thickness. Cut hearts using a 2″ cutter.
  4. Use smaller heart cutter to create window in half the cookies. Bake 8-10 minutes until edges are golden.
  5. Cool completely. Spread jam on solid hearts, top with windowed cookies. Dust with powdered sugar.
