- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg + 1 yolk
- 1 tsp almond extract
- 1/2 cup seedless raspberry jam
- 1/4 cup powdered sugar (for dusting)
Instructions
- Beat butter and sugar until light and fluffy. Add egg, yolk, and almond extract.
- Gradually mix in flour until dough forms. Divide into 2 discs, wrap in plastic, and chill 1 hour.
- Preheat oven to 350°F. Roll dough to 1/4″ thickness. Cut hearts using a 2″ cutter.
- Use smaller heart cutter to create window in half the cookies. Bake 8-10 minutes until edges are golden.
- Cool completely. Spread jam on solid hearts, top with windowed cookies. Dust with powdered sugar.
