These Valentine Peanut Butter Heart Cookie Bars are the perfect sweet treat to share with your loved ones! Ingredients
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 Tablespoon cornstarch
- 1 teaspoon baking soda
- 6 Tablespoons Valentine’s Day sprinkles (red, white, and pink), divided
- 1/2 cup Valentine’s M&M’s
- 2 bags (approx. 8 oz total) Reese’s Peanut Butter Hearts (chocolate & white chocolate)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cornstarch, and baking soda.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Spread the dough evenly into the prepared baking pan.
- Sprinkle 4 tablespoons of the Valentine’s Day sprinkles evenly over the dough.
- Scatter the Valentine’s M&M’s and Reese’s Peanut Butter Hearts over the sprinkles.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the bars cool completely in the pan before lifting them out using the parchment paper overhang.
- Cut into squares and enjoy!
Notes
For a richer flavor, use natural peanut butter. If you don’t have Reese’s Peanut Butter Hearts, you can use regular Reese’s Peanut Butter Cups, chopped. Store leftover bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. These bars also freeze well – wrap individually and store in a freezer-safe bag for up to 2 months.
