Description

Ingredients

  • 2 ½ cups blanched almond flour
  • ¼ cup coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ⅓ cup coconut oil (solid)
  • ¼ cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract

Instructions

  1. In medium bowl, whisk together almond flour, coconut flour, baking soda, and salt
  2. In separate bowl, beat coconut oil with maple syrup until creamy
  3. Add egg, vanilla, and almond extract. Mix until smooth
  4. Gradually add dry ingredients to wet ingredients, mixing until dough forms
  5. Shape dough into disk, wrap in plastic, and chill 30 minutes
  6. Preheat oven to 350°F (175°C). Roll dough to ¼” thickness
  7. Cut with heart-shaped cookie cutters. Transfer to parchment-lined baking sheets
  8. Bake 10-12 minutes until edges golden. Cool completely before decorating

Notes

Tips: For sweeter cookies, add 1-2 tbsp coconut sugar. Substitutions: Use ghee instead of coconut oil for nut-free version. Storage: Keep in airtight container up to 5 days. Freeze un-baked dough disks for up to 3 months.
