- 2 ½ cups blanched almond flour
- ¼ cup coconut flour
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ⅓ cup coconut oil (solid)
- ¼ cup pure maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
Instructions
- In medium bowl, whisk together almond flour, coconut flour, baking soda, and salt
- In separate bowl, beat coconut oil with maple syrup until creamy
- Add egg, vanilla, and almond extract. Mix until smooth
- Gradually add dry ingredients to wet ingredients, mixing until dough forms
- Shape dough into disk, wrap in plastic, and chill 30 minutes
- Preheat oven to 350°F (175°C). Roll dough to ¼” thickness
- Cut with heart-shaped cookie cutters. Transfer to parchment-lined baking sheets
- Bake 10-12 minutes until edges golden. Cool completely before decorating
Notes
Tips: For sweeter cookies, add 1-2 tbsp coconut sugar. Substitutions: Use ghee instead of coconut oil for nut-free version. Storage: Keep in airtight container up to 5 days. Freeze un-baked dough disks for up to 3 months.
