Description

Ingredients

  • 1 (15 oz.) box red velvet cake mix
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 11 ounces white chocolate chips or melting wafers
  • Valentine’s sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
  2. In a large bowl, combine cake mix, vegetable oil, eggs and vanilla extract
  3. Mix until fully combined (dough will be thick)
  4. Scoop 1.5-tablespoon portions and roll into balls
  5. Place dough balls 2″ apart on prepared baking sheets
  6. Bake for 8-10 minutes until edges are set
  7. Cool on baking sheets for 5 minutes before transferring to wire rack
  8. Melt white chocolate in microwave-safe bowl in 30-second intervals, stirring between each
  9. Dip cooled cookies halfway into melted chocolate
  10. Immediately decorate with sprinkles
  11. Let chocolate set completely before serving

Notes

Tips: Use a cookie scoop for uniform sizes. Let chocolate harden completely before stacking cookies. Substitutions: Canola oil works instead of vegetable oil. Dark chocolate chips can replace white chocolate. Storage: Keep in airtight container at room temperature for up to 5 days.
