- 1 (15 oz.) box red velvet cake mix
- ⅓ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 11 ounces white chocolate chips or melting wafers
- Valentine’s sprinkles
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
- In a large bowl, combine cake mix, vegetable oil, eggs and vanilla extract
- Mix until fully combined (dough will be thick)
- Scoop 1.5-tablespoon portions and roll into balls
- Place dough balls 2″ apart on prepared baking sheets
- Bake for 8-10 minutes until edges are set
- Cool on baking sheets for 5 minutes before transferring to wire rack
- Melt white chocolate in microwave-safe bowl in 30-second intervals, stirring between each
- Dip cooled cookies halfway into melted chocolate
- Immediately decorate with sprinkles
- Let chocolate set completely before serving
Notes
Tips: Use a cookie scoop for uniform sizes. Let chocolate harden completely before stacking cookies. Substitutions: Canola oil works instead of vegetable oil. Dark chocolate chips can replace white chocolate. Storage: Keep in airtight container at room temperature for up to 5 days.
