A hearty and flavorful vegan lentil loaf packed with vegetables, herbs, and spices. Perfect as a comforting main dish for holidays or everyday meals.

- 2 cups cooked lentils
- 1 cup breadcrumbs
- 1 cup finely chopped onion
- 1 cup grated carrot
- 1/2 cup finely chopped celery
- 3 cloves garlic, minced
- 3 tbsp ground flaxseed + 9 tbsp water (flax egg)
- 3 tbsp tomato paste
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp cumin
- Salt and black pepper to taste
- For glaze: 1/4 cup ketchup + 1 tbsp maple syrup
Instructions
- Preheat oven to 180°C (350°F). Line a loaf pan with parchment paper.
- Prepare flax eggs by mixing flaxseed and water in a small bowl. Let sit for 5 minutes.
- In a skillet, heat olive oil and sauté onion, carrot, celery, and garlic until softened.
- In a large bowl, combine lentils, breadcrumbs, sautéed vegetables, tomato paste, soy sauce, flax eggs, and spices.
- Mix until well combined, mashing some lentils for texture.
- Transfer mixture into the prepared loaf pan and press firmly.
- Spread glaze mixture (ketchup + maple syrup) evenly on top.
- Bake for 45–50 minutes, until firm and golden.
- Cool for 10 minutes before slicing and serving.
Notes
This vegan lentil loaf slices best after resting. Serve with mashed potatoes and vegan gravy for a complete meal.
