Description

A hearty and flavorful vegan lentil loaf packed with vegetables, herbs, and spices. Perfect as a comforting main dish for holidays or everyday meals.


Ingredients

  • 2 cups cooked lentils
  • 1 cup breadcrumbs
  • 1 cup finely chopped onion
  • 1 cup grated carrot
  • 1/2 cup finely chopped celery
  • 3 cloves garlic, minced
  • 3 tbsp ground flaxseed + 9 tbsp water (flax egg)
  • 3 tbsp tomato paste
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp cumin
  • Salt and black pepper to taste
  • For glaze: 1/4 cup ketchup + 1 tbsp maple syrup

Instructions

  1. Preheat oven to 180°C (350°F). Line a loaf pan with parchment paper.
  2. Prepare flax eggs by mixing flaxseed and water in a small bowl. Let sit for 5 minutes.
  3. In a skillet, heat olive oil and sauté onion, carrot, celery, and garlic until softened.
  4. In a large bowl, combine lentils, breadcrumbs, sautéed vegetables, tomato paste, soy sauce, flax eggs, and spices.
  5. Mix until well combined, mashing some lentils for texture.
  6. Transfer mixture into the prepared loaf pan and press firmly.
  7. Spread glaze mixture (ketchup + maple syrup) evenly on top.
  8. Bake for 45–50 minutes, until firm and golden.
  9. Cool for 10 minutes before slicing and serving.

Notes

This vegan lentil loaf slices best after resting. Serve with mashed potatoes and vegan gravy for a complete meal.
