Description

A hearty and festive Vegan Thanksgiving Lentil Stromboli, filled with savory lentils, vegetables, and herbs, wrapped in golden baked dough – the perfect plant-based holiday centerpiece.


Ingredients

  • 2 cups cooked green or brown lentils
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, chopped
  • 1 cup spinach, fresh
  • 1/2 cup carrots, shredded
  • 1/2 cup celery, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon sage
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 pizza dough (store-bought or homemade)
  • 2 tablespoons non-dairy milk (for brushing)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Sauté onions, garlic, celery, and carrots until softened.
  4. Add mushrooms and cook until they release moisture.
  5. Stir in lentils, spinach, soy sauce, thyme, rosemary, sage, salt, and pepper. Cook 5 minutes until flavors meld.
  6. Roll out pizza dough on a floured surface into a rectangle.
  7. Spread the lentil filling evenly down the center of the dough.
  8. Fold sides of dough over filling and pinch edges to seal.
  9. Place seam-side down on a baking sheet lined with parchment paper.
  10. Brush with non-dairy milk for a golden crust.
  11. Bake 30–35 minutes until golden brown.
  12. Cool slightly before slicing and serving.

Notes

You can prepare the lentil filling a day ahead to save time on Thanksgiving Day. Serve with vegan gravy or cranberry sauce for extra holiday flavor.
