- 2 cups cooked green or brown lentils
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, chopped
- 1 cup spinach, fresh
- 1/2 cup carrots, shredded
- 1/2 cup celery, diced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon sage
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- Salt and pepper to taste
- 1 pizza dough (store-bought or homemade)
- 2 tablespoons non-dairy milk (for brushing)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Sauté onions, garlic, celery, and carrots until softened.
- Add mushrooms and cook until they release moisture.
- Stir in lentils, spinach, soy sauce, thyme, rosemary, sage, salt, and pepper. Cook 5 minutes until flavors meld.
- Roll out pizza dough on a floured surface into a rectangle.
- Spread the lentil filling evenly down the center of the dough.
- Fold sides of dough over filling and pinch edges to seal.
- Place seam-side down on a baking sheet lined with parchment paper.
- Brush with non-dairy milk for a golden crust.
- Bake 30–35 minutes until golden brown.
- Cool slightly before slicing and serving.
Notes
You can prepare the lentil filling a day ahead to save time on Thanksgiving Day. Serve with vegan gravy or cranberry sauce for extra holiday flavor.
