Vegetable Beef Soup

Description

A hearty and comforting soup packed with tender beef, vegetables, and savory broth – perfect for chilly days.


Ingredients

  • 1 lb beef stew meat, cut into small chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 cup green beans, trimmed and chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup water
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add beef and brown on all sides. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant and translucent.
  3. Add carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Return beef to the pot. Stir in green beans, diced tomatoes, beef broth, water, thyme, basil, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and simmer uncovered for 60–75 minutes, or until beef is tender and vegetables are cooked through.
  6. Remove bay leaf before serving. Adjust seasoning if needed.

Notes

This soup gets better the next day. Store in the fridge for up to 4 days or freeze for later.
