Description

A delicious and quick Chinese-inspired noodle dish loaded with fresh vegetables and tossed in a savory, flavorful sauce. Perfect for a meatless dinner any night of the week.


Ingredients

  • 200g lo mein noodles or spaghetti
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1/2 cup snow peas
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook lo mein noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat.
  3. Add garlic and ginger, sauté for 1 minute until fragrant.
  4. Add bell pepper, cabbage, carrot, and snow peas. Stir fry for 5-6 minutes until vegetables are tender-crisp.
  5. Add cooked noodles to the pan.
  6. Pour in soy sauce, hoisin sauce, oyster sauce (if using), and sesame oil. Toss to combine evenly.
  7. Season with salt and pepper as needed.
  8. Top with sliced green onions and sesame seeds before serving.

Notes

For a gluten-free version, use tamari instead of soy sauce and gluten-free noodles. Add tofu or tempeh for extra protein.
