  • 1/2 cup unsalted butter — softened
  • 2/3 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 tablespoon water — or brewed coffee, if you have it
  • 2 tablespoons special dark — or regular cocoa powder
  • 1 box — 3.9 ounces instant chocolate, chocolate fudge, or special dark pudding mix (not sugar-free)
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups Valentine M&Ms — plus more for topping
  • 1/4 cup Valentine sprinkles — plus more for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking sheet or line with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the vanilla extract and egg until well combined.
  4. In a separate small bowl, whisk together the water (or coffee) and cocoa powder. Add to the butter mixture and mix well.
  5. Gradually add the pudding mix, flour, baking soda, and salt to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the Valentine M&Ms.
  7. Drop by rounded tablespoons onto the prepared baking sheet.
  8. Sprinkle the tops of the cookies with additional Valentine M&Ms and sprinkles.
  9. Bake for 8-10 minutes, or until the edges are golden brown.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, use brewed coffee instead of water. You can substitute other types of M&Ms if Valentine’s colors aren’t available. Store cooled cookies in an airtight container at room temperature for up to 3 days. These cookies are best enjoyed fresh! Don’t overbake, as they should remain soft and chewy.
