Ingredients

  • 4 large carrots, peeled into thin ribbons
  • 2 tbsp rice vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp maple syrup or honey
  • 1 tsp fresh grated ginger
  • 1 clove garlic, minced (optional)
  • 1 tbsp toasted sesame seeds (optional)
  • 1 scallion, thinly sliced (optional)

Instructions

  1. Prepare the carrot ribbons by using a vegetable peeler to shave the carrots lengthwise. Place ribbons in a large mixing bowl.
  2. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, maple syrup, ginger, and garlic until fully emulsified.
  3. Pour the dressing over the carrot ribbons. Toss well to coat evenly. Let sit for 10 minutes to absorb flavors.
  4. Plate the salad and garnish with sesame seeds and sliced scallions. Serve immediately or chill for later.

Notes

You can swap maple syrup for honey, and add chili flakes for a spicy kick if desired.
