A refreshing and crunchy carrot ribbon salad tossed in a zesty sesame-soy dressing, perfect for a light side or appetizer.
Ingredients

- 4 large carrots, peeled into thin ribbons
- 2 tbsp rice vinegar
- 1 tbsp low sodium soy sauce
- 1 tsp toasted sesame oil
- 1 tsp maple syrup or honey
- 1 tsp fresh grated ginger
- 1 clove garlic, minced (optional)
- 1 tbsp toasted sesame seeds (optional)
- 1 scallion, thinly sliced (optional)
Instructions
- Prepare the carrot ribbons by using a vegetable peeler to shave the carrots lengthwise. Place ribbons in a large mixing bowl.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, maple syrup, ginger, and garlic until fully emulsified.
- Pour the dressing over the carrot ribbons. Toss well to coat evenly. Let sit for 10 minutes to absorb flavors.
- Plate the salad and garnish with sesame seeds and sliced scallions. Serve immediately or chill for later.
Notes
You can swap maple syrup for honey, and add chili flakes for a spicy kick if desired.
