Ingredients

- 1 cup oat flour (or blended oats)
- ½ cup vanilla or chocolate protein powder
- ½ cup almond butter (or peanut butter)
- ¼ cup honey or maple syrup
- 1 large egg (or flax egg for vegan)
- ½ tsp baking soda
- ¼ cup dark chocolate chips (optional)
- 1–2 tbsp milk (if dough is too dry)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a bowl, whisk oat flour, protein powder, and baking soda.
- Combine wet ingredients: In another bowl, mix almond butter, honey, and egg until smooth.
- Fold together: Gradually add dry ingredients to wet, stirring until combined. Fold in chocolate chips.
- Bake: Scoop dough into 12 balls, flatten slightly, and bake for 10–12 minutes.
- Cool: Let rest 5 minutes before eating (they firm up as they cool!).
Notes
- Vegan? Use flax egg + plant-based protein powder.
- Nut-free? Swap almond butter for sunflower seed butter.
