Ingredients

  • 3 ½ tsp baking powder
  • 1 tbsp granulated sugar
  • ½ tsp salt
  • 1 ¼ cups milk (or milk alternative)
  • 1 large egg
  • 3 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

Instructions

  1. In large bowl, whisk together flour, baking powder, sugar and salt
  2. In another bowl, beat milk, egg, melted butter and vanilla
  3. Pour wet ingredients into dry ingredients, stir until just combined (batter will be slightly lumpy)
  4. Heat griddle or pan over medium heat, lightly butter
  5. Pour ¼ cup batter per pancake
  6. Cook until bubbles form on surface (2-3 minutes), then flip
  7. Cook other side until golden brown (1-2 minutes)
  8. Serve warm with maple syrup and butter

Notes

  • For fluffier pancakes: Let batter rest 5 minutes before cooking
  • For dairy-free: Use almond milk and coconut oil
  • For buttermilk pancakes: Add 1 tbsp lemon juice to milk and let sit 5 minutes
