Description

Ingredients

  • 3 cups whole milk
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 3 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter
  • 4 ripe bananas, sliced
  • 1 box (11 oz) vanilla wafers
  • 1 cup heavy whipping cream (for topping)
  • 2 tablespoons powdered sugar (for topping)

Instructions

  • In a saucepan, whisk together sugar, cornstarch, and salt.
  • Gradually add milk, whisking constantly over medium heat until thickened.
  • In a separate bowl, whisk egg yolks. Slowly add a small amount of hot milk mixture to temper the eggs, then stir back into the saucepan.
  • Cook for another 2 minutes, stirring constantly, then remove from heat.
  • Stir in vanilla extract and butter until smooth. Let cool slightly.
  • In a dish, layer vanilla wafers, banana slices, and pudding. Repeat layers until all ingredients are used.
  • In a separate bowl, whip heavy cream with powdered sugar until stiff peaks form. Spread over pudding.
  • Refrigerate for at least 4 hours before serving.

Notes

  • Best served chilled for at least 4 hours, but overnight is ideal.
  • Can substitute store-bought whipped topping for homemade whipped cream.
  • To prevent banana slices from browning, lightly coat them with lemon juice.
