Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Add the rolled oats, protein powder, and peanut butter to the mashed bananas. Mix until well combined. The dough should be fairly runny; this consistency will depend on the type of oats, peanut butter, and ripeness of the bananas used.
- If using, fold in the dark chocolate chips or cacao nibs.
- Using a measuring cup or small scoop, place even-sized mounds of dough onto the prepared baking sheet. Shape them as desired, as these cookies won’t spread much during baking.
