Description

These Whipped Shortbread Cookies are melt-in-your-mouth buttery perfection—light, delicate, and ideal for the holidays or anytime you need a sweet treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • Sprinkles or candied cherries for topping (optional)

Instructions

  1. Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat butter until very light and fluffy, about 5 minutes.
  3. Add powdered sugar and beat until fully combined and creamy.
  4. Mix in vanilla extract.
  5. In a separate bowl, whisk together flour and cornstarch.
  6. Gradually add dry ingredients to butter mixture, beating until light and whipped.
  7. Drop tablespoons of dough onto prepared baking sheets or pipe using a star tip.
  8. Top with sprinkles or a piece of candied cherry if desired.
  9. Bake for 18–20 minutes, or until bottoms are lightly golden (tops should remain pale).
  10. Cool completely before serving or storing.

Notes

Do not overbake—these cookies are meant to stay pale and tender. They also freeze beautifully.
