Ingredients

  • 1 cup (120g) oat flour
  • 1 scoop (30g) vanilla or chocolate protein powder
  • 1/4 cup (60g) almond butter or peanut butter
  • 1/4 cup (60ml) maple syrup or honey
  • 1/4 cup (60ml) unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup (40g) dark chocolate chips or chopped nuts (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the oat flour, protein powder, baking powder, and salt.
  • Add the almond butter, maple syrup, almond milk, and vanilla extract. Stir until a thick dough forms.
  • Fold in the chocolate chips or nuts (if using).
  • Scoop tablespoon-sized portions of dough onto the baking sheet and flatten slightly with your hands.
  • Bake for 10-12 minutes, or until the edges are golden.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container for up to 5 days or freeze for longer storage.
  • For a nut-free version, use sunflower seed butter instead of almond butter.
  • Adjust sweetness by adding more or less maple syrup.
