- 2 celery stalks, chopped

- Salt to taste
- Black pepper to taste
- 1 teaspoon dried Italian seasoning
- 1 cup baby spinach
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned, breaking it apart as it cooks.
- Add onion, carrots, and celery and cook until softened.
- Stir in garlic and Italian seasoning and cook for 1 minute.
- Pour in chicken broth and bring to a gentle boil.
- Add pasta and cook until al dente.
- Reduce heat and stir in heavy cream.
- Add spinach and cook until wilted.
- Season with salt and black pepper.
- Serve hot topped with grated Parmesan cheese.
Notes
For extra flavor, use spicy Italian sausage. Adjust soup thickness by adding more broth if needed.
