- 1 medium winter squash (butternut or kabocha)
- 1 yellow onion
- 2 garlic cloves
- 3 cups vegetable broth
- 200ml heavy cream
- 2 tablespoons olive oil
- Salt
- Black pepper
- A pinch of nutmeg
Instructions
- Peel and cut the squash into cubes.
- Chop the onion and garlic.
- Heat the olive oil in a large pot.
- Sauté the onion and garlic until translucent.
- Add the squash cubes and stir.
- Pour in the vegetable broth.
- Cook over medium heat for 20 minutes.
- Add the heavy cream, salt, pepper, and nutmeg.
- Blend the soup until smooth.
- Adjust seasoning and serve hot.
