Description

A comforting, creamy winter squash soup with warm flavors, perfect for cold days.


Ingredients

  • 1 medium winter squash (butternut or kabocha)
  • 1 yellow onion
  • 2 garlic cloves
  • 3 cups vegetable broth
  • 200ml heavy cream
  • 2 tablespoons olive oil
  • Salt
  • Black pepper
  • A pinch of nutmeg

Instructions

  1. Peel and cut the squash into cubes.
  2. Chop the onion and garlic.
  3. Heat the olive oil in a large pot.
  4. Sauté the onion and garlic until translucent.
  5. Add the squash cubes and stir.
  6. Pour in the vegetable broth.
  7. Cook over medium heat for 20 minutes.
  8. Add the heavy cream, salt, pepper, and nutmeg.
  9. Blend the soup until smooth.
  10. Adjust seasoning and serve hot.
