Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 cup pearl barley
  • 1 zucchini, diced
  • 1 cup chopped cabbage
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add pearl barley and stir to coat.
  5. Add zucchini, cabbage, diced tomatoes, vegetable broth, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat to low.
  7. Simmer for 40 minutes, stirring occasionally.
  8. Season with salt and black pepper.
  9. Remove bay leaf.
  10. Serve hot garnished with fresh parsley.

Notes

This soup thickens as it sits. Add extra broth when reheating if needed.
