Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 cup chopped cabbage
  • 1 cup green beans, trimmed and cut
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt
  • Black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and sauté until softened.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in potatoes, cabbage, and green beans.
  5. Add diced tomatoes and vegetable broth.
  6. Season with thyme, rosemary, salt, and black pepper.
  7. Bring to a boil, then reduce heat to low.
  8. Simmer for 30 to 35 minutes until vegetables are tender.
  9. Taste and adjust seasoning if needed.
  10. Serve hot.
