- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 cup chopped cabbage
- 1 cup green beans, trimmed and cut
- 1 can diced tomatoes
- 6 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt
- Black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and sauté until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in potatoes, cabbage, and green beans.
- Add diced tomatoes and vegetable broth.
- Season with thyme, rosemary, salt, and black pepper.
- Bring to a boil, then reduce heat to low.
- Simmer for 30 to 35 minutes until vegetables are tender.
- Taste and adjust seasoning if needed.
- Serve hot.
