Ingredients

- 1 cup red lentils, rinsed
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon chili flakes
- 6 cups vegetable broth
- 1 can diced tomatoes
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery, and cook until softened.
- Stir in garlic, cumin, paprika, turmeric, and chili flakes.
- Add red lentils, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes.
- Season with salt and black pepper.
- Blend partially for a thicker texture if desired.
- Serve hot garnished with fresh parsley.
Notes
This soup thickens as it cools, so add extra broth when reheating if needed. It freezes well for make-ahead meals.
