Description

A spooky, creamy chowder filled with hearty vegetables and seafood, perfect for a Halloween feast.


Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 2 cups corn kernels
  • 3 cups seafood stock (or chicken stock)
  • 1 cup heavy cream
  • 1 cup cooked shrimp
  • 1 cup cooked clams or mussels
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Sauté onion and garlic until fragrant.
  3. Add potatoes, carrots, and corn, stirring for 5 minutes.
  4. Pour in seafood stock and bring to a simmer.
  5. Cook until vegetables are tender, about 15 minutes.
  6. Stir in heavy cream, shrimp, and clams.
  7. Season with thyme, salt, and pepper.
  8. Simmer gently for 5 more minutes.
  9. Serve hot, garnished with parsley.

Notes

For extra Halloween fun, serve in hollowed-out bread bowls or cauldrons.
