Ingredients

- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 2 potatoes, peeled and cubed
- 2 carrots, sliced
- 2 cups corn kernels
- 3 cups seafood stock (or chicken stock)
- 1 cup heavy cream
- 1 cup cooked shrimp
- 1 cup cooked clams or mussels
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Sauté onion and garlic until fragrant.
- Add potatoes, carrots, and corn, stirring for 5 minutes.
- Pour in seafood stock and bring to a simmer.
- Cook until vegetables are tender, about 15 minutes.
- Stir in heavy cream, shrimp, and clams.
- Season with thyme, salt, and pepper.
- Simmer gently for 5 more minutes.
- Serve hot, garnished with parsley.
