- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 zucchini, chopped
- 1 cup mushrooms, sliced
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans, drained
- 1 can (28 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in carrots, potatoes, zucchini, and mushrooms. Cook for 5 minutes.
- Add kidney beans, black beans, and diced tomatoes.
- Pour in vegetable broth and stir in paprika, thyme, and oregano.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and let simmer for 30–35 minutes until vegetables are tender.
- Serve hot with crusty bread for the full witchy effect.
