Description

A delicious Zero Carb Thanksgiving Platter featuring roasted turkey, buttery vegetables, and savory sides—all without carbs.


Ingredients

  • 1 whole roasted turkey (about 4-5kg)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste
  • 1 head cauliflower, cut into florets (for mash)
  • 200ml heavy cream
  • 100g cream cheese
  • 100g green beans, steamed
  • 100g Brussels sprouts, halved and roasted
  • 100g mushrooms, sautĆ©ed in butter

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Rub turkey with olive oil, butter, garlic, rosemary, thyme, salt, and pepper.
  3. Roast turkey for 3-4 hours, basting occasionally, until juices run clear.
  4. Meanwhile, steam cauliflower florets until soft, then blend with cream, cream cheese, salt, and pepper until smooth.
  5. Steam green beans and season with butter and salt.
  6. Roast Brussels sprouts with olive oil, salt, and pepper until crispy.
  7. SautƩ mushrooms in butter until golden.
  8. Arrange roasted turkey slices, cauliflower mash, green beans, Brussels sprouts, and mushrooms on a large platter.
  9. Serve warm for a wholesome, carb-free Thanksgiving feast.

Notes

Add sugar-free cranberry sauce or herb butter for extra flavor while keeping it carb-free.
