Description

A moist, sweet banana bread made with just a few pantry staples.


Ingredients

  • 5 overripe bananas
  • 1 can condensed milk (395g)
  • 2 tsp ground cinnamon
  • 2.5 cups self-raising flour
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a loaf pan.
  2. Mash the bananas in a large bowl until smooth.
  3. Stir in the condensed milk, cinnamon, eggs, melted butter, and vanilla.
  4. Fold in the self-raising flour until just combined.
  5. If using, fold in chopped walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until a skewer inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and serve.

Notes

For extra flavor, add a pinch of nutmeg or drizzle caramel on top.
