Ingredients

- 1 cup packed fresh parsley
- 3 cloves garlic, minced
- 2 tbsp red wine vinegar
- 1/3 cup olive oil
- 1/2 tsp red pepper flakes
- 1/2 tsp dried oregano
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Roughly chop the parsley.
- In a food processor combine parsley, garlic, red pepper flakes, oregano, salt, and pepper; pulse until coarsely chopped.
- Add red wine vinegar and pulse a few more times.
- While processing, slowly drizzle in olive oil until smooth.
- Taste and adjust seasoning; serve immediately or store in the fridge for up to 3 days.

Great on grilled steak, chicken, fish, roasted vegetables, or as a dip for crusty bread.
