- 2 tablespoons Chopped Pecans – finely chopped
- 1 large Egg
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, baking powder, cinnamon, nutmeg, and salt.
- Add maple syrup, olive oil, vanilla extract, and egg; mix until a smooth batter forms.
- Fold in grated carrots and the finely chopped pecans until evenly distributed.
- Scoop rounded tablespoons of batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a spoon and sprinkle with the optional chopped pecans for decoration.
- Bake for 10-12 minutes, or until the edges turn golden and the centers are set.
- Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, ensure the maple syrup is pure and consider adding a pinch of extra cinnamon for enhanced flavor.
