Description

A crisp and refreshing autumn salad with sweet Honeycrisp apples, tangy feta, crunchy pecans, and a light vinaigrette.


Ingredients

  • 2 Honeycrisp apples, thinly sliced
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1/2 cup crumbled feta cheese
  • 1/3 cup candied pecans (or toasted pecans)
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, add the mixed greens.
  2. Top with sliced Honeycrisp apples, feta cheese, pecans, and dried cranberries.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
  4. Drizzle the dressing over the salad just before serving.

Notes
