Ingredients

- 2 Honeycrisp apples, thinly sliced
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 1/2 cup crumbled feta cheese
- 1/3 cup candied pecans (or toasted pecans)
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions
- In a large bowl, add the mixed greens.
- Top with sliced Honeycrisp apples, feta cheese, pecans, and dried cranberries.
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
- Drizzle the dressing over the salad just before serving.
- Toss gently to combine and serve immediately.
Notes
For extra crunch, you can add pumpkin seeds. Swap feta with goat cheese for a creamier texture.
