- 1 large or 2 small avocados (½ cup mashed)
- ¾ cup granulated sugar
- 2 overripe bananas
- 2 large eggs
- 6 tablespoons milk
- 1 teaspoon vinegar
- 1 teaspoon baking soda
- 2 cups sifted all-purpose flour
- ½ cup mini chocolate chips or nuts
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, mash the avocados until smooth, about ½ cup.
- Add the mashed avocado, mashed bananas, granulated sugar, eggs, milk, and vinegar; whisk until combined.
- Sift together the flour and baking soda, then fold into the wet mixture until just incorporated.
- Stir in the mini chocolate chips or nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra flavor, add a teaspoon of vanilla extract or a pinch of cinnamon. Store wrapped at room temperature for up to 3 days or refrigerate for longer freshness.
