Ingredients

  • 1 large or 2 small avocados (½ cup mashed)
  • ¾ cup granulated sugar
  • 2 overripe bananas
  • 2 large eggs
  • 6 tablespoons milk
  • 1 teaspoon vinegar
  • 1 teaspoon baking soda
  • 2 cups sifted all-purpose flour
  • ½ cup mini chocolate chips or nuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, mash the avocados until smooth, about ½ cup.
  3. Add the mashed avocado, mashed bananas, granulated sugar, eggs, milk, and vinegar; whisk until combined.
  4. Sift together the flour and baking soda, then fold into the wet mixture until just incorporated.
  5. Stir in the mini chocolate chips or nuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, add a teaspoon of vanilla extract or a pinch of cinnamon. Store wrapped at room temperature for up to 3 days or refrigerate for longer freshness.
