Ingredients

  • 2 large eggs

  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Toast the bread slices until golden and crisp.
  2. While the bread toasts, halve the avocado, remove the pit, and scoop the flesh into a bowl; mash with a pinch of salt.
  3. Heat olive oil in a skillet over medium heat; add the eggs and cook sunny-side up or over easy, seasoning with pepper and optional red pepper flakes.
  4. Spread the mashed avocado evenly over each toast slice.
  5. Top each with a cooked egg, then finish with a light sprinkle of pepper and red pepper flakes if desired.

Notes
