- 1 ripe avocado
- 2 large eggs
- 1 teaspoon olive oil

- Red pepper flakes (optional)
Instructions
- Toast the bread slices until golden and crisp.
- While the bread toasts, halve the avocado, remove the pit, and scoop the flesh into a bowl; mash with a pinch of salt.
- Heat olive oil in a skillet over medium heat; add the eggs and cook sunny-side up or over easy, seasoning with pepper and optional red pepper flakes.
- Spread the mashed avocado evenly over each toast slice.
- Top each with a cooked egg, then finish with a light sprinkle of pepper and red pepper flakes if desired.
Notes
For extra brightness, drizzle with a few drops of lemon juice.
