- 2 medium zucchini, sliced into 1/4 to 1/2-inch rounds
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup freshly grated Parmesan (pre-shredded is also fine)
Instructions
- Preheat the oven to 400°F (200°C).
- Place zucchini slices in a large bowl and drizzle with olive oil. Toss to coat evenly.
- Arrange zucchini in a single layer on a baking sheet lined with parchment paper.
- Sprinkle with salt, pepper, and generously top with Parmesan cheese.
- Bake for 20–25 minutes or until the zucchini is tender and cheese is golden and crispy.
- Serve immediately as a side or snack.
Notes
For extra crispiness, broil the zucchini for an additional 2–3 minutes after baking.
