Description

Ingredients

  • 4 cups (500 g) all‑purpose flour, plus extra for dusting
  • 2 tablespoons baking powder
  • 3/4 teaspoon fine salt
  • 2 sticks (8 oz/227 g) cold unsalted butter, sliced ½‑inch thick
  • 1 cup (240 ml) whole milk plus 2 tablespoons, plus more if needed
  • 1 large egg
  • 1 stick (4 oz/113 g) unsalted butter, softened for honey butter
  • 1 ½ cups (510 g) mild honey, divided
  • 1 teaspoon fine salt
  • 3/4 teaspoon rose water or orange blossom water (optional) or juice of 1 mandarin orange
  • 2 cups (8 oz/227 g) chopped walnuts, divided
  • ⅓ cup (67 g) granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. In a large bowl combine flour, baking powder, and salt.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Stir in milk and egg just until a shaggy dough forms; knead lightly and let rest 30 minutes.
  4. Meanwhile, prepare honey butter by mixing softened butter, ½ cup honey, and a pinch of salt.
  5. Roll out half of the dough on a lightly floured surface to a 12‑inch rectangle; spread half of the honey butter over it.
  6. Sprinkle with half of the cinnamon‑sugar mixture and half of the chopped walnuts.
  7. Roll tightly, slice into 12 pieces, and place in a greased baking pan.
  8. Repeat with the remaining dough, honey butter, cinnamon‑sugar, and walnuts for the second layer.
  9. Bake at 350°F (175°C) for 30‑35 minutes, until golden brown.
  10. While hot, drizzle the remaining honey over the buns and let cool slightly.
  11. Serve warm, optionally topped with extra nuts or a dusting of powdered sugar.

Notes

For a gluten‑free version, substitute the all‑purpose flour with a 1:1 gluten‑free blend. Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months. Serve warm with a cup of tea or coffee.
