- 2 sticks (8 oz/227 g) cold unsalted butter, sliced ½‑inch thick
- 1 cup (240 ml) whole milk plus 2 tablespoons, plus more if needed
- 1 large egg
- 1 stick (4 oz/113 g) unsalted butter, softened for honey butter
- 1 ½ cups (510 g) mild honey, divided
- 1 teaspoon fine salt
- 3/4 teaspoon rose water or orange blossom water (optional) or juice of 1 mandarin orange
- 2 cups (8 oz/227 g) chopped walnuts, divided
- ⅓ cup (67 g) granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- In a large bowl combine flour, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Stir in milk and egg just until a shaggy dough forms; knead lightly and let rest 30 minutes.
- Meanwhile, prepare honey butter by mixing softened butter, ½ cup honey, and a pinch of salt.
- Roll out half of the dough on a lightly floured surface to a 12‑inch rectangle; spread half of the honey butter over it.
- Sprinkle with half of the cinnamon‑sugar mixture and half of the chopped walnuts.
- Roll tightly, slice into 12 pieces, and place in a greased baking pan.
- Repeat with the remaining dough, honey butter, cinnamon‑sugar, and walnuts for the second layer.
- Bake at 350°F (175°C) for 30‑35 minutes, until golden brown.
- While hot, drizzle the remaining honey over the buns and let cool slightly.
- Serve warm, optionally topped with extra nuts or a dusting of powdered sugar.
Notes
For a gluten‑free version, substitute the all‑purpose flour with a 1:1 gluten‑free blend. Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months. Serve warm with a cup of tea or coffee.
