Description

Moist banana bread loaded with juicy dark cherries and rich chocolate chips, sweetened with maple syrup for a wholesome, plant-based treat.


Ingredients

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 large ripe bananas, mashed
  • 1 cup unsweetened plant-based milk
  • ½ cup maple syrup
  • 1½ tsp vanilla extract
  • ½ cup non-dairy chocolate chips
  • 1 cup frozen dark cherries, thawed
  • 1/3 cup coconut oil, melted
  • 1 tsp ground cinnamon
  • ½ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  3. Add the melted coconut oil, maple syrup, vanilla extract, and plant-based milk; stir until combined.
  4. Fold in the mashed bananas, then gently mix in the chocolate chips and thawed cherries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra moisture, you can add a tablespoon of apple cider vinegar. Use overripe bananas for stronger flavor.
