- 2 cups white whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 large ripe bananas, mashed
- 1 cup unsweetened plant-based milk
- ½ cup maple syrup
- 1½ tsp vanilla extract
- ½ cup non-dairy chocolate chips
- 1 cup frozen dark cherries, thawed
- 1/3 cup coconut oil, melted
- 1 tsp ground cinnamon
- ½ tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Add the melted coconut oil, maple syrup, vanilla extract, and plant-based milk; stir until combined.
- Fold in the mashed bananas, then gently mix in the chocolate chips and thawed cherries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra moisture, you can add a tablespoon of apple cider vinegar. Use overripe bananas for stronger flavor.
