Description

Fluffy pancakes made with mashed banana, flour, egg, milk, and baking powder for a quick, naturally sweet breakfast.


Ingredients

  • 1 cup all-purpose flour
  • 1 ripe banana, mashed
  • 1 egg
  • 3/4 cup milk
  • 1 tsp baking powder
  • 2 tbsp granulated sugar
  • 1 tbsp melted butter
  • 1/4 tsp salt
  • cooking spray for the pan

Instructions

  1. In a large bowl whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl mash the banana and combine with the egg, milk, melted butter, and vanilla extract if desired.
  3. Pour the wet mixture into the dry ingredients and stir until just combined; the batter will be slightly lumpy.
  4. Heat a non-stick skillet over medium heat and lightly coat with cooking spray.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve the pancakes warm with maple syrup, fresh fruit, or your favorite toppings.

Notes

Use overripe bananas for extra sweetness; you can fold in chocolate chips or berries for variation.
