Description

Ingredients

  • 1 tsp baking soda (5 g)
  • 1/4 tsp salt (1.5 g)
  • 1/8 tsp cinnamon (0.3 g)
  • 1/8 tsp nutmeg (0.3 g)
  • 1 1/2 cups mashed bananas (340 g)
  • 6 tbsp melted butter (85 g)
  • 3/4 cup granulated sugar (150 g)
  • 1 large egg (50 g)
  • 1 tsp vanilla extract (5 g)
  • 3/4 cup chopped walnuts or pecans (90100 g)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl combine mashed bananas, melted butter, sugar, egg, and vanilla extract; mix until smooth.
  4. Add the wet ingredients to the dry ingredients and stir just until incorporated.
  5. Fold in the chopped walnuts or pecans gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra moisture, you can add 1/4 cup of plain yogurt or applesauce to the wet ingredients.
