  • 1/2 cup (65g) chopped walnuts
  • 1/4 cup (58g) salted butter
  • 1 tsp (2g) ground cinnamon
  • 1/3 cup (80ml) maple syrup
  • 1 tsp (4g) vanilla bean paste or extract
  • 1 tsp (4g) rum extract (optional)
  • 2 large bananas or 3 medium bananas, sliced into 1” coins
  • 1/4 cup (30g) all-purpose flour
  • 1 tbsp (12g) granulated sugar
  • 1/2 tsp (1g) ground cinnamon
  • 1/8 tsp nutmeg
  • Large pinch of salt
  • 1 cup (240ml) milk of choice
  • 3 large eggs
  • 2 tsp (8g) vanilla bean paste or extract
  • 46 thick slices (1.25″ thick) of leftover banana bread, or 12 slices (1′ thick) of brioche bread
  • 2 tbsp butter for cooking

Instructions

  1. In a small saucepan, melt the salted butter over medium heat and add the brown sugar, stirring until dissolved.
  2. Stir in the chopped walnuts, ground cinnamon, maple syrup, vanilla bean paste, and optional rum extract; cook for 2 minutes.
  3. Add the sliced bananas and cook, turning gently, until caramelized, about 3-4 minutes; remove from heat and set aside.
  4. In a mixing bowl, whisk together the all-purpose flour, granulated sugar, ground cinnamon, nutmeg, and a pinch of salt.
  5. In a separate bowl, beat the eggs with milk, vanilla bean paste, and a pinch of salt until smooth.
  6. Combine the wet mixture into the dry ingredients, mixing just until incorporated.
  7. Heat a non‑stick skillet over medium heat and melt a thin layer of butter.
  8. Dip each slice of banana bread (or brioche) into the custard mixture, allowing it to soak briefly on each side.
  9. Cook the soaked slices in the skillet until golden brown, about 2‑3 minutes per side.
  10. Transfer the cooked French toast to a serving plate and spoon generous amounts of the warm Bananas Foster topping over each slice.
  11. Serve immediately, optionally garnished with extra walnuts or a dusting of powdered sugar.

Notes

For extra richness, drizzle additional maple syrup or a splash of bourbon over the finished dish. Use day‑old banana bread for the best texture.
