  • 1/2 pound ground beef
  • 1/4 cup cooked black beans
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon Dijon mustard
  • 8 mini-hamburger buns
  • Grilled Crunchy Coleslaw:
  • ½ head red cabbage, cut into 4 wedges (core intact)
  • 2 tablespoons canola or vegetable oil
  • 1 tablespoon sugar
  • Kosher salt and freshly ground black pepper, to taste
  • 1 teaspoon finely grated orange zest
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh orange juice
  • ¼ cup olive oil
  • ¼ cup chopped fresh parsley
  • 1 green onion, chopped

Instructions

  1. In a large bowl, combine ground beef, cooked black beans, olive oil, garlic powder, salt, pepper, and Dijon mustard; mix until just combined.
  2. Form the mixture into 8 small patties, about the size of a mini bun.
  3. Heat a skillet over medium‑high heat and cook the patties for 3–4 minutes per side, or until browned and cooked through.
  4. While the patties cook, prepare the Grilled Crunchy Coleslaw: preheat a grill or grill pan, brush cabbage wedges with oil, season with salt and pepper, and grill for 2–3 minutes per side until charred but still crisp.
  5. In a small bowl, whisk together sugar, orange zest, Dijon mustard, orange juice, and olive oil; toss with the grilled cabbage, parsley, and green onion.
  6. Toast the mini buns lightly on the grill or in a pan.
  7. Assemble each slider: place a patty on the bottom bun, top with a generous spoonful of coleslaw, then cover with the top bun.
  8. Serve immediately while warm.

Notes

For a vegetarian version, omit the beef and double the black beans. The coleslaw can be made ahead and stored in the fridge for up to 2 days. Leftovers reheat well in a skillet.
