- 1 cup (250 g) mashed bananas (about 2 medium bananas)
- 2 large eggs, room temperature
- ½ cup (100 g) Greek yogurt, room temperature
- 4 tablespoons (54 g) vegetable oil
- 1 teaspoon vanilla extract or paste
- ½ cup (110 g) brown sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 2 ¼ cups (270 g) all-purpose flour
- ¾ cup (135 g) chocolate chips
- ¾ cup (90 g) toasted chopped walnuts
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mash bananas until smooth.
- Add eggs, Greek yogurt, vegetable oil, and vanilla; whisk until combined.
- Stir in brown sugar until fully incorporated.
- Sift together baking powder, baking soda, and kosher salt; add to wet mixture and mix.
- Fold in flour until just combined, being careful not to overmix.
- Gently fold in chocolate chips and toasted walnuts if using.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
- Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Let the batter rest for 5 minutes for a fluffier crumb. Store wrapped at room temperature for up to 3 days.
