  • 1 cup (250 g) mashed bananas (about 2 medium bananas)
  • 2 large eggs, room temperature
  • ½ cup (100 g) Greek yogurt, room temperature
  • 4 tablespoons (54 g) vegetable oil
  • 1 teaspoon vanilla extract or paste
  • ½ cup (110 g) brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 ¼ cups (270 g) all-purpose flour
  • ¾ cup (135 g) chocolate chips
  • ¾ cup (90 g) toasted chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mash bananas until smooth.
  3. Add eggs, Greek yogurt, vegetable oil, and vanilla; whisk until combined.
  4. Stir in brown sugar until fully incorporated.
  5. Sift together baking powder, baking soda, and kosher salt; add to wet mixture and mix.
  6. Fold in flour until just combined, being careful not to overmix.
  7. Gently fold in chocolate chips and toasted walnuts if using.
  8. Pour batter into prepared loaf pan and smooth the top.
  9. Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Let the batter rest for 5 minutes for a fluffier crumb. Store wrapped at room temperature for up to 3 days.
