Description

A comforting, creamy sauce over tender ground beef and buttery pasta, inspired by classic Salisbury steak.


Ingredients

  • 1 pound 90/10 lean ground beef
  • 1 medium yellow onion, finely chopped (about 1 cup)
  • 3 large cloves garlic, finely chopped
  • 4 tablespoons unsalted butter
  • 1 (8-ounce) package sliced cremini mushrooms
  • 1/4 cup all-purpose flour
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon chopped fresh thyme, plus leaves for garnish
  • 1/2 teaspoon freshly ground black pepper
  • 1 to 2 teaspoons kosher salt
  • 12 ounces pasta (like pappardelle), cooked according to package directions

Instructions

  1. Heat canola oil in a large skillet over medium-high heat.
  2. Add ground beef, breaking it up, and cook until browned, about 5 minutes; drain excess fat.
  3. Transfer beef to a bowl, then melt butter in the same skillet.
  4. Add chopped onion and garlic, sauté until softened, about 3 minutes.
  5. Stir in sliced mushrooms and cook until they release moisture and begin to brown, about 4 minutes.
  6. Sprinkle flour over the vegetables and stir to coat, cooking for 1 minute.
  7. Gradually whisk in beef broth, scraping up any browned bits, and bring to a simmer.
  8. Add Worcestershire sauce, Dijon mustard, chopped thyme, black pepper, and 1 teaspoon kosher salt; stir to combine.
  9. Reduce heat and let sauce thicken, stirring occasionally, for 10 minutes.
  10. Return the browned beef to the skillet, stir to coat, and simmer for another 5 minutes.
  11. Taste and adjust seasoning with additional salt if needed.
  12. While sauce simmers, cook the pasta according to package directions; drain and set aside.
  13. Plate the cooked pasta, spoon the beef and mushroom sauce over it, and garnish with fresh thyme leaves.

Notes

For a richer flavor, use homemade beef broth. You can substitute half-and-half for part of the broth to make the sauce creamier. Adjust salt and pepper to personal preference.
