- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 4 cups beef or chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional garnish: shredded cheese, sour cream, chopped cilantro, lime wedges
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add ground beef, cooking until browned and crumbly.
- Stir in taco seasoning, chili powder, and cumin.
- Add diced tomatoes, black beans, corn, and broth; bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Season with salt and pepper, then serve with desired toppings.
