Description

A warm, flavorful taco-inspired soup loaded with seasoned ground beef, black beans, corn, and tomatoes.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef or chicken broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional garnish: shredded cheese, sour cream, chopped cilantro, lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add ground beef, cooking until browned and crumbly.
  4. Stir in taco seasoning, chili powder, and cumin.
  5. Add diced tomatoes, black beans, corn, and broth; bring to a boil.
  6. Reduce heat and simmer for 20 minutes, stirring occasionally.
  7. Season with salt and pepper, then serve with desired toppings.
