Ingredients

  • 1 tortilla
  • 1/4 cup cheddar cheese
  • 1/4 cup salsa
  • 1/4 cup potatoes
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • optional: chopped green onions or cilantro for garnish

Instructions

  1. Heat butter in a non‑stick skillet over medium heat.
  2. Add diced potatoes and sauté 5‑6 minutes until lightly golden and tender.
  3. Season potatoes with salt and pepper, then push to the side of the pan.
  4. Whisk eggs in a bowl, then pour into the empty space of the skillet, scrambling gently until just set.
  5. Stir the potatoes and eggs together, then remove from heat.
  6. Warm the tortilla in a dry pan or microwave for 10 seconds.
  7. Sprinkle cheddar cheese over the egg‑potato mixture, then fold the tortilla around the filling.
  8. Top with salsa and optional garnish before serving.

Notes

For extra flavor, add a pinch of smoked paprika or a few slices of avocado.
