- 1 tortilla
- 1/4 cup cheddar cheese
- 1/4 cup salsa
- 1/4 cup potatoes
- 1 tablespoon butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- optional: chopped green onions or cilantro for garnish
Instructions
- Heat butter in a non‑stick skillet over medium heat.
- Add diced potatoes and sauté 5‑6 minutes until lightly golden and tender.
- Season potatoes with salt and pepper, then push to the side of the pan.
- Whisk eggs in a bowl, then pour into the empty space of the skillet, scrambling gently until just set.
- Stir the potatoes and eggs together, then remove from heat.
- Warm the tortilla in a dry pan or microwave for 10 seconds.
- Sprinkle cheddar cheese over the egg‑potato mixture, then fold the tortilla around the filling.
- Top with salsa and optional garnish before serving.
Notes
