Description

Spicy, juicy chicken meatballs tossed in tangy buffalo sauce, finished with a creamy blue cheese drizzle — perfect for game day or a quick appetizer.


Ingredients

  • 1 1/4 lb 93% ground chicken
  • 1/4 cup panko crumbs
  • 1 large egg
  • 2 scallions, chopped
  • 1 clove garlic, crushed
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1/3 cup Frank’s Hot Sauce
  • 1/4 cup blue cheese dressing (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl combine ground chicken, panko crumbs, egg, chopped scallions, and crushed garlic; mix until just combined.
  3. Season the mixture with kosher salt and freshly ground black pepper, then shape into 1‑inch meatballs and place on the prepared sheet.
  4. Bake for 18‑20 minutes, or until the meatballs are cooked through and lightly browned.
  5. While the meatballs bake, whisk together Frank’s Hot Sauce with a tablespoon of water to thin slightly.
  6. Remove the meatballs from the oven and toss immediately in the buffalo sauce until coated.
  7. Serve hot, drizzled with blue cheese dressing if desired, and garnish with extra scallions.

Notes

For extra crispness, bake on a wire rack. Substitute gluten‑free panko for a gluten‑free version.
