- 1 1/4 lb 93% ground chicken
- 1/4 cup panko crumbs
- 1 large egg
- 2 scallions, chopped
- 1 clove garlic, crushed
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1/3 cup Frank’s Hot Sauce
- 1/4 cup blue cheese dressing (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl combine ground chicken, panko crumbs, egg, chopped scallions, and crushed garlic; mix until just combined.
- Season the mixture with kosher salt and freshly ground black pepper, then shape into 1‑inch meatballs and place on the prepared sheet.
- Bake for 18‑20 minutes, or until the meatballs are cooked through and lightly browned.
- While the meatballs bake, whisk together Frank’s Hot Sauce with a tablespoon of water to thin slightly.
- Remove the meatballs from the oven and toss immediately in the buffalo sauce until coated.
- Serve hot, drizzled with blue cheese dressing if desired, and garnish with extra scallions.
Notes
For extra crispness, bake on a wire rack. Substitute gluten‑free panko for a gluten‑free version.
