Description

  • 1 cup (113 grams) pecan halves, chopped
  • 1/4 teaspoon fine sea salt, for butter pecans
  • 1 1/2 cups (191 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1 cup plus 2 tablespoons (225 grams) granulated sugar
  • 2 large eggs, at room temperature
  • 1 stick (113 grams) unsalted butter, melted and cooled
  • 1 1/2 cups (354 grams) mashed very ripe bananas (about 3 large bananas)
  • 2 tablespoons (28 grams) sour cream or plain full-fat yogurt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a small saucepan, melt 2 tablespoons butter over low heat, stir in the chopped pecans and 1/4 teaspoon salt, then toast for 2-3 minutes until fragrant; set aside to cool.
  3. In a large bowl whisk together flour, baking soda, ground cinnamon, and 1/2 teaspoon salt.
  4. In another bowl beat granulated sugar, the melted stick of butter, eggs, mashed bananas, sour cream, vanilla extract, and the toasted pecan mixture until smooth.
  5. Add the wet ingredients to the dry ingredients and stir gently until just combined; do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra crunch, sprinkle additional pecans on top before baking. Use very ripe bananas for maximum sweetness and moisture.
